The quality of caviar depends on several conditions, due to the fact it is a natural product, the roe of all fishes differs, despite the fact the breed of the sturgeon is the same. The color and taste of the caviar, depends on the food and the habitat of the sturgeon. Also the diameter of the roe is very important, the bigger the roe, the more exclusive the caviar.
